Chicken wraps

Ingredients

  • 1 pkg Tofurky lightly seasoned chick'n
  • 2 burrito size flour tortillas or wraps
  • Pinch of salt
  • Generous grating of black pepper
  • Ingredients from a variant below
  • 1-2 cups greens, such as arugula, baby kale, spinach, or romaine lettuce

Sriracha

  • Sriracha
  • Mayonnaise, to taste (we like Hellmann's)

Garlic caper

  • 2-4 cloves roasted garlic or garlic confit
  • 1 Tbsp capers
  • Mayonnaise, to taste

Thai

  • 1 carrot, grated
  • 1/4 cup peanut butter, heated in microwave for 30 seconds if refrigerated
  • Sliced green onion
  • 1-2 Heaping tablespoons Laoganma spicy chili crisp

Steps

  1. Combine all ingredients except greens in a bowl and stir. Taste and adjust for salt/pepper
  2. Heat a nonstick skillet over high heat for a few minutes. Put tortillas on pan for 15-30 seconds per side to soften
  3. Spread shredded greens over tortillas on a plate. Spoon chicken mixture over greens. Wrap burrito style.
